Broad Bean Dip

Hello my beauties,

I have gone a little MIA online, as I’ve been studying hard to finish my second year at The london College of naturopathic medicine. This year was so intense it has left me totally drained. So time to recharge. And to do so, the first thing I do will be to take myself off the online world for a few weeks, sleep a lot, and eat delicious food like the one Im about to share with you.

This recipe is so easy, yet such a fabulous party treat. It looks like guacamole, because there is avocado in there, but is much richer and much more filling because of the Broad beans.

Toma my lovely chef, made this at our retreat last month and it was definitely a winner!

So what do you need?

250g Broad bans
1 avocado
Juice of Half a lemon plus the zest
2 tbsp of Extra Virgin Olive Oil
1 garlic clove
A pinch of sea salt
Fresh ground pepper
Spring onion, micro greens and black sesame seeds and extra olive oil for garnish

Boil a large pot of water and add 1 tbsp of sea salt. Then add your broad beans for 30secs to a minute max.
Then remove the beans of the water, and put in a separate pot with cold water. Peel off the skin.

Put the beans and the rest of the ingredients minus the garnishing in a food processor and blitz until smooth. Put in a beautiful bowl and add the seeds and olive oil as a garnish.

Delicious with pitta bread, crunchy vegetables but also as a creamy pasta sauce.
