Raw Courgetti and Mackerel Salad

Raw Courgetti Salads are always a great idea.

I’ve been obsessed with this version and had it pretty much everyday this week! It’s easy to do and full of flavours

I’ve added ingredients and herbs that are great to fight Candida and heal your gut.

It takes less than 20min to throw together!

Ingredients

  • 2 mackerel fillets
  • 2 Courgettes
  • 1/2 Cucumber
  • Cherry Tomatoes
  • Fresh Parsley
  • Fresh coriander
  • 2tbsp of Chia seeds
  • A handful of Walnuts
  • A handful of Pumpkin Seeds
  • Olive Oil
  • Salt
  • Dry Oregano and Thyme for the Mackerel

In a bowl Spiralize 1 Courgette, 1/2 a cucumber, 1 carrot, and 1/2 Apple

Add a handful of cherry tomatoes, cut in halves or quarters

Add 1tsp of Chia Seeds, 2 tbsp of pumpkin seeds and 10/12 broken Walnuts

Add some fresh Coriander, some fresh Parsley

Squeeze 1/2 of a Lime juice and a pinch of Salt

Mix it well and refrigerate.

Meanwhile, saute your Mackerel fillet in a Pan with Olive Oil. Season your fish with dried herbs like Oregano or Thyme.

Once cooked, let it to cool down for 3min and add it to your Salad.

Mix it all well and squeeze the other half of your life. 

Add Salt to taste.
