Kale and Beetroot Salad

More simple dishes to make with beetroot!

Kale, Mackerel and Beetroot..a great blend of flavours for a simple dish packed with goodness.

If you’ve missed my previous beetroot recipe, I talk about all of it’s proven benefits here….

So what do we need for this delicious dish?

Ingredients

3 handful of Cavolo Nero leaves

1 medium sized beetroot (cooked/plain)

1 mackerel fillet (cooked)

2 tsp of Capers

1 tbsp of pomegranate

A pinch of salt to massage in Kale

For the sauce

Juice of 1 ½ lemon

2 tbsp of Chopped parsley (teeny bits)

3 tbsp of Olive Oil

Massage your Kale with 1 tbsp of Olive Oil and some salt, until the leaves soften and absorb the oil and salt. Once done  leave aside.

Prepare your Salad sauce by mixing the rest of the oil, the chopped parsley and the lemon juice. Set aside

In a large pan, heat your kale at very low heat, for 3 min to warm it up slightly. After 3min , take it off the pan into a large salad bowl. Add the beetroot chopped, the mackerel and the capers, and mix all with salad sauce.

Garnish with nuts, seeds and serve.
