Kale, Mackerel and Beetroot..a great blend of flavours for a simple dish packed with goodness.

So what do we need for this delicious dish?
1 mackerel fillet (cooked)
2 tsp of Capers
1 tbsp of pomegranate
A pinch of salt to massage in Kale
For the sauce
Juice of 1 ½ lemon
2 tbsp of Chopped parsley (teeny bits)
3 tbsp of Olive Oil
Prepare your Salad sauce by mixing the rest of the oil, the chopped parsley and the lemon juice. Set aside
In a large pan, heat your kale at very low heat, for 3 min to warm it up slightly. After 3min , take it off the pan into a large salad bowl. Add the beetroot chopped, the mackerel and the capers, and mix all with salad sauce.
Garnish with nuts, seeds and serve.
