School assignments, exams and travelling have made it quite challenging the past three weeks to keep on top of my nutrition. So it’s been more eat quick meals, lots of sugars, caffeine….. which always left me feeling even more tired.
Anywhooo I’m back in my kitchen, food prep back on, ready to take back control of what I put in my body….
Beets are in season and there are so many creative ways to use them, But this ain’t one of them LOL
This is the easy peezy one, of putting it in a blender with lots of other fabulous ingredients,blending and downing it.
Studies have demonstrated that Beetroot is a powerful antioxidant, anti inflammatory food with vascular protective effects. Human studies done so far have demonstrated that beetroot supplementation reduces blood pressure, lowers inflammation and much more. It is also proven that it enhances athletic performance. Adding Kale, Parsley, and Lemon add vitamins and minerals and therefore benefits that will do you wonder
1 small beet /cooked and plain
1 handful of Kale
2 handful of frozen berries,
½ handful of Parsley,
1 apple chopped and coarsed
Juice of 1 lime/ Lemon is ok too
Water to desired consistency
Blend it all and sip x
